Chicken & Brown Rice Bowl

Serves: 2

Prep Time: 20 minutes

Total Time: 45 minutes

What you'll need:

1 Cup Brown Rice

2 Cups Water

1 lb Ground Chicken

Salt & Pepper to taste

1/4 Red cabbage

1 Carrot

1 Tbsp Cilantro

1 Tbsp Parsley

1 Tbsp Dijon mustard 

2 Tbsp Red or white wine vinegar

2 Tbsp Avocado Oil


In a small saucepan, add rice and water, bring to a boil. Once boiling, reduce to low and put the lid on until cooked.

Ground Chicken:

Brown the ground chicken and add salt & pepper to taste.

Cabbage Slaw:

First, make the dressing in a bowl by adding; dijon, wine vinegar, and avocado oil (Whisk together).

Then, cut the cabbage in thin slices along with the carrots, cilantro, and parsley and throw it all on top of the dressing.

Mix! I like to add some pepper on the top for taste.
